A restaurant that lets diners assemble their pho bowl step by step is opening on Queen West next week.
Renso Pho-Potle is scheduled to open on Saturday, Oct. 24 at 506 Queen St. W., according to Over Here Toronto. The restaurant bills itself as the first of its kind in the city.
Founder Linda Vu is bringing a fast-casual, pick-your-own format to the Vietnamese noodle soup, the site reports. Diners choose their own broth, protein, seasonings and garnishes, so each bowl is built to individual taste.
How it works
The format follows a simple sequence. Guests start by choosing a broth, then add a protein and select their seasonings. They finish the bowl with garnishes of their choice.
The menu is not limited to pho. A small selection of other Vietnamese dishes will also be offered alongside the build-your-own bowls.
A new option on a busy strip
The arrival adds a customizable take on a dish with a long-established following in Toronto. Queen Street West, already dense with restaurants and quick-service spots, will gain a format that has been common in other fast-casual categories but not, by the restaurant's own description, applied to pho in the city before.
